The evolution of mankind has always gone together with their activities and techniques’ progress. Cuisine has taken part of such growth until broil meat has been brolied as it is made today. Little by little Man learnt how to cook the different cuts of meat, its treatment, the quartering of the animal, without mentioning the animal’s slaughter. All this is determined and enriched by the Argentinean gaucho’s culture and lifestyle, who feels a great love of his cows and any kind of meats. It is similar to any love story, with agreements and disagreements, where the passion always gets out our best. It is the passion that we Argentineans feel for the meat what turns us into the best. Besides, we count with the help of the vast Argentinian Pampas full of fertile grass, where the cows are fed, the crossbreeds and selective breeds, and the favorable climate. All those factors contribute to our barbeque be recognized worldwide.

What prevail in Argentina’s regional cuisine are the pasties (“empanadas”). They are almost always present in any meal either as starter or main dish. Each province of Argentina prepares them differently, so their deep-rooted ways of cooking them identify each region.

Other emblematic Argentinean product is the "alfajor". It has an Arabic origin. Its name derives from the Arabic word " alfahúa” and then the Spanish word “alajú”. Its basic form in Argentina consists of two round sweet biscuits joined together with “dulce de leche” or jam and covered with powdered sugar. In most “alfajores” there are two layers of cake and a filling in between.

It is said that the “asado” (barbecue) has been invented by Argentineans!!
It must not be true at all… After knowing how to make a fire and how to hunt, mankind started to broil their meats using red-hot stones or impaling pieces of meat in the point of a spear to burn them, without putting any salt on them…
